Overnight Chia Seed Breakfast Bowl or Pudding

 

This is so easy (and quick) to prepare which is why  I like it!

Mornings in our household are always a bit of a rush getting Alex off to school, then me to do some exercise and then getting to work.. all by 8.30am!

This is best done the night before you want to eat it for breakfast.

  • 1.5 cups of your choice of coconut or almond milk
  • ¼ cup of chia seeds
  • ¼ cup flax seeds (optional)

To top (optional)

  • Fresh fruit to top (optional). I like a mix of berries (strawberries, blueberries or raspberries are my favourite
  • Nuts, seeds or dried fruit
  • Unsweetened coconut

Just mix all the ingredients together in a bowl and ensure all the chia seeds are covered with liquid and put in your fridge over night.

The next morning you may want to add some extra milk if you prefer a runnier consistency (the chia seeds will have soaked up a lot of the excess milk) and any toppings you fancy or have to hand.

Variation

To add a chocolate flavour to it add around 1 Tsp unsweetened cocoa powder to your taste. Sweeten with a little stevia if too bitter for you or with a banana.

Tip

If you are cutting down on sugar choose berries rather than other fruit such as bananas which are higher in sugar (albeit natural sugar).
