(makes about 12 to 16 depending on the size you want!)
These have quite a gooey fudge like texture and are completely grain free which is what I love about them. And as they have no refined sugar in them I can indulge without feeling too guilty!
1.5 cups pitted Medjool dates (soaked in hot water till soft- usually about 10 mins)
1.5 cups water (I use the water from the soaked dates)
1.5 cups almond flour
1 cup unsweetened cocoa or cacao powder
1 tsp baking powder
3 tps vanilla extract
Pinch salt
Optional: stevia if you wish to sweeten – just a few drops. We like ours without but it depends on how bitter the cacao powder is you are using so test the mix before you put it in the oven!
Blend all the ingredients together and put into a tray lined with baking parchment. Add a little hot water if too dry – should be a gooey thick mix but not too runny. Cook for around 30 mins on 360c. You will know when they are ready by testing with a cocktail stick until it comes out clean. Allow to cool before cutting and serving.
Variation: Add some chopped nuts – macadamias or pecans good. Or some dried cherries.
