Leftover-Turkey Soup

This is a family favourite so thanks to my lovely mum for this recipe. It’s one of our Christmas highlights. Nothing entices more on freezing cold January day than some warming turkey soup packed full of antioxidants to keep you healthy.

  • Turkey carcass and left-over meat
  • 4 bay leaves
  • I large onion
  • Garlic cloves
  • Selection of chopped vegetables  – whatever you have to hand but we like:
  • Carrots
  • Cauliflower
  • Squash
  • Parsnips
  • Broccoli
  • Potatoes or sweet potatoes
  • 4 Chicken stock cubes
  • Salt & Pepper to season
  1. Strip the turkey carcass and put any left over meat, brown meat, wings and legs into either a slow cooker or a large saucepan (if you only have smaller saucepans you might want to use 2 and split into 2 batches), cover with water
  2. Add the vegetables and chicken stock (keep tasting throughout cooking and add extra stock to taste)
  3. Cook on a low heat for a few hours or in the slow cooker for most of the day
  4. When you are ready to serve, discard bones (and to make sure to get them all out)
  5. Whizz in a blender to the consistency you desire. We like this quite smooth but chunky is good too!
  6. Add salt and pepper to season
  7. ENJOY!
