Grain and guilt-free pancakes that are a wonderful weekend treat and they take less than 10 minutes to make!
Serves 2 (makes 6 to 8 mini pancakes)
- ½ cup almond meal flour
- 2 tbs ground flaxseed meal
- 2 eggs
- ¼ to ½ cup of milk of your choice (I use almond milk or coconut milk)
- Vanilla extract
- Pinch of salt
Optional – add a tsp of maple syrup or a couple of drops of stevia to the batter mix to sweeten or instead of the vanilla add some cinnamon
Heat 1 tsp coconut oil in a frying pan
- Beat all the ingredients together until they are all combined and the mixture is pourable– if the consistency is thick and you want a slightly thinner pancake add a little more milk or some water
- Pour some of the mix into the frying pan and you’ll know one side is done when bubbles appear. If you are feeling brave you can either toss them over to do the other side or use a slice and cook for a couple of minutes until the other side is golden too.
To serve: Add berries or passion fruit and drizzle maple syrup over the top – yummy! Or one of my favouries is freshly squeezed lemon or orange juice with a dash of raw honey. Bananas and a couple of slabs of good quality dark chocolate (70% cacao or more is better) melted and drizzled over also goes down rather well! Let me know your favourite toppings!
